Ingredients

  • 1 lb. fresh cheese-filled tortellini
  • 2 Tbsp. butter
  • 2 Tbsp. flour
  • 1 3/4 cup skim milk
  • 1 garlic clove
  • 1/4 tsp. black pepper
  • pinch of ground red pepper
  • 3/4 cup shredded sharp Cheddar cheese, divided
  • 2 Tbsp. grated Parmesan cheese
  • 2 Tbsp. chopped fresh parsley
  • 1 Tbsp. dry bread crumbs

Instructions

  1. Preheat broiler.
  2. Cook tortellini according to package directions.
  3. Drain.
  4. Melt butter in a saucepan; whisk in flour and cook until smooth and bubbly, about 1 minute.
  5. Gradually whisk in milk, then add crushed garlic, black pepper, and ground red pepper.
  6. Cook, stirring constantly until thickened and just beginning to boil.
  7. Reduce heat and simmer for 2 minutes.
  8. Remove from heat; stir in 1/2 cup shredded Cheddar cheese and Parmesan cheese.
  9. Stir in cooked tortellini and chopped parsley.
  10. Transfer mixture to a shallow 1 1/2-quart casserole dish.
  11. In a small bowl, combine remaining Cheddar cheese and bread crumbs; sprinkle evenly on top.
  12. Broil 4 inches from heat source for 1 to 2 minutes until golden brown.
  13. Serve hot with a fresh salad.
