Nippersink Prune Cake

Ingredients

  • 2 1/2 c. sugar
  • 1 c. buttermilk
  • 2 c. flour
  • 1 c. chopped nuts
  • 1 c. vegetable oil
  • 3 eggs
  • 1 heaping c. cooked and mashed prunes
  • 1 tsp. cinnamon
  • 1 tsp. nutmeg
  • 1 tsp. allspice
  • 1 1/2 tsp. soda
  • 1 tsp. vanilla
  • 1 stick butter or margarine

Instructions

  1. Beat together 1 1/2 cups sugar, eggs and oil until well blended.
  2. Sift together the flour, cinnamon, nutmeg, allspice and 1 teaspoon soda.
  3. Add this to the blended egg mixture alternately with 1/2 cup buttermilk.
  4. Add prunes, nuts and vanilla.
  5. Bake in a greased and floured 13 x 9 x 2-inch pan at 300° for 1 hour.
