Ingredients

  • 1 cup raisins
  • 1/2 cup chopped apple
  • 1/2 cup chopped dates
  • 1 cup water
  • 1/2 cup margarine
  • 1 cup flour
  • 1 teaspoon baking soda
  • 1 teaspoon vanilla
  • 1 cup quick oats
  • 2 eggs
  • 3/4 cup chopped nuts

Instructions

  1. Boil raisins, chopped apple, chopped dates, and water for 3 minutes on low heat.
  2. Add margarine to the mixture and let it cool.
  3. Combine cooled mixture with flour, baking soda, vanilla, quick oats, beaten eggs, and chopped nuts; mix well.
  4. Refrigerate the mixture overnight.
  5. Drop teaspoon-sized portions onto a greased baking sheet.
  6. Bake at 350°F (175°C) for 10 to 12 minutes.
  7. Optionally, place a pecan or walnut on each cookie before baking.
