Ingredients

  • 1 cup rolled oats
  • 1/2 cup orange juice
  • 1/2 cup boiling water
  • 2 tablespoons oil
  • 1 cup brown sugar
  • 1/2 cup Egg Beaters or 2 eggs
  • 1/2 cup raisins
  • 1/2 cup chopped nuts
  • 1/2 cup oat bran
  • 3/4 cup flour
  • 1 teaspoon baking powder
  • 1 teaspoon salt
  • 2 teaspoons vanilla

Instructions

  1. Soak oats in orange juice and boiling water for 15 minutes.
  2. Cream together oil and brown sugar.
  3. Add soaked oats, eggs or Egg Beaters, raisins, chopped nuts, oat bran, flour, baking powder, salt, and vanilla to the creamed mixture.
  4. Mix until just combined.
  5. Spoon the batter into a greased muffin pan.
  6. Bake at 350°F (175°C) for 20 minutes.
