Ingredients

  • 1/2 cup butter
  • 2 cups brown sugar
  • 16 ounces canned pumpkin
  • 2 eggs
  • 1 teaspoon vanilla
  • 1.5 cups flour
  • 1.5 cups oatmeal
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 2 teaspoons pumpkin pie spice
  • 1/2 cup walnuts

Instructions

  1. Cream together the softened butter and brown sugar.
  2. Add the canned pumpkin, eggs, and vanilla; mix well.
  3. Stir in the flour, oatmeal, baking powder, baking soda, salt, and pumpkin pie spice until combined.
  4. Spread the batter evenly in a greased 15 x 10-inch jelly roll pan.
  5. Bake at 350°F (175°C) for 25 to 30 minutes until a toothpick inserted in the center comes out clean.
  6. Frost with cream cheese frosting and sprinkle with chopped walnuts.
