Ingredients

  • 1 teaspoon vanilla extract
  • 1 egg
  • 1 cup brown sugar
  • 1/2 teaspoon baking soda
  • Toffee bars, chopped
  • 2 cups all-purpose flour
  • 1 teaspoon ground cinnamon
  • 1/2 cup butter
  • 2 cups quick-cooking oats
  • 1/4 teaspoon salt

Instructions

  1. Preheat oven to 375°F (190°C). Lightly grease a cookie sheet or line it with parchment paper.
  2. In a bowl, beat together softened butter, eggs, brown sugar, and vanilla extract until well blended.
  3. In a separate bowl, combine flour, baking soda, ground cinnamon, and salt. Add to the wet mixture and beat until blended.
  4. Stir in quick-cooking oats and chopped toffee bars with a spoon.
  5. Drop rounded teaspoonfuls of dough onto the prepared cookie sheet, spacing them about 2 inches apart.
  6. Bake for 8 to 10 minutes or until the edges are lightly browned.
  7. Cool the cookies on the sheet for 1 minute, then transfer to a wire rack to cool completely.
