Ingredients

  • 1 cup boiling water
  • 1 cup quick cooking oats
  • 2 eggs
  • 2 cups firmly packed brown sugar
  • 1/4 cup margarine, softened
  • 1 teaspoon grated lemon rind
  • 1 cup sifted flour
  • 1 teaspoon baking soda
  • 1 teaspoon cinnamon
  • 1 cup chopped walnuts
  • powdered sugar

Instructions

  1. Pour boiling water over oats; let stand for 20 minutes until water is absorbed.
  2. Combine eggs and brown sugar in a large bowl; beat with electric mixer at medium speed until well blended.
  3. Beat in margarine and lemon rind.
  4. Sift flour, baking soda, and cinnamon onto waxed paper.
  5. Add sifted dry ingredients to the egg and brown sugar mixture.
  6. Add oatmeal; mix well.
  7. Stir in chopped walnuts.
  8. Pour batter into a sprayed 9 x 9 x 2-inch baking pan.
  9. Bake in a preheated oven at 350°F (175°C) for 45 minutes or until a toothpick inserted in the center comes out clean.
