- In an 8-inch pan, spread the cubed French bread and raisins evenly.
- Whisk together 2 cups of milk, 2 tablespoons of brown sugar, and a pinch of salt in a bowl.
- Pour the milk mixture over the bread and raisins, ensuring they are well coated.
- Let stand for 15 minutes, turning the bread once to absorb the liquid.
- In a separate bowl, whisk together the remaining 1 cup of milk, 1 tablespoon of brown sugar, the egg, egg whites, sugar, vanilla, nutmeg, and cinnamon.
- Pour this custard mixture over the bread and raisins in the pan.
- Place the pan in a larger roasting pan and fill the outer pan with boiling water to create a water bath.
- Bake in the preheated oven for about 35 minutes, or until the pudding is set and golden on top.
