Ingredients

  • 4 cups cubed French bread
  • 1/2 cup raisins
  • 3 cups 1% milk, divided
  • 3 tablespoons packed brown sugar, divided
  • pinch of salt
  • 1 large egg
  • 2 large egg whites
  • 1/3 cup sugar
  • 1 teaspoon vanilla
  • 1/4 teaspoon nutmeg
  • 1/2 teaspoon cinnamon
  • boiling water

Instructions

  1. Preheat oven to 350°F.
  2. In an 8-inch pan, spread the cubed French bread and raisins evenly.
  3. Whisk together 2 cups of milk, 2 tablespoons of brown sugar, and a pinch of salt in a bowl.
  4. Pour the milk mixture over the bread and raisins, ensuring they are well coated.
  5. Let stand for 15 minutes, turning the bread once to absorb the liquid.
  6. In a separate bowl, whisk together the remaining 1 cup of milk, 1 tablespoon of brown sugar, the egg, egg whites, sugar, vanilla, nutmeg, and cinnamon.
  7. Pour this custard mixture over the bread and raisins in the pan.
  8. Place the pan in a larger roasting pan and fill the outer pan with boiling water to create a water bath.
  9. Bake in the preheated oven for about 35 minutes, or until the pudding is set and golden on top.
