Ingredients

  • 1 box Pillsbury pie crust mix
  • 3 or 4 whole chicken breasts or 1 whole chicken
  • 4 hard-boiled eggs, sliced
  • 1 stick butter
  • 8 Tbsp. flour
  • 1 tsp. salt
  • pepper

Instructions

  1. Make up pie crust and chill.
  2. Boil chicken in water. Debone and cut chicken into bite-size pieces.
  3. Cover the bottom of a 13 x 9 x 9-inch pan or large casserole dish with the chicken.
  4. Top with sliced hard-boiled eggs.
  5. Melt butter in a saucepan.
  6. Stir in flour, salt, and pepper.
  7. Add chicken stock slowly and cook until thickened.
  8. Pour the sauce over the chicken and eggs.
  9. Roll out the pie crust and place it on top of the filling.
  10. Dot the top with butter.
  11. Bake at 350°F for about 30 minutes, until golden.
