Ingredients

  • 1 lb smoked sausage, sliced
  • 1 chopped onion
  • 1 tsp vegetable oil
  • 3 cups water
  • 2 chicken bouillon cubes
  • 1 tsp salt
  • 1/4 tsp pepper
  • 1 bay leaf
  • 1/2 tsp thyme
  • 3 carrots
  • 3 celery stalks
  • 1/2 head cabbage
  • 2 tbsp rice
  • 8 oz tomato sauce
  • 15 oz red kidney beans

Instructions

  1. In a large saucepan, brown the chopped onion in vegetable oil.
  2. Add the sliced smoked sausage, carrots, celery, and cook until vegetables are tender.
  3. Pour in water and add chicken bouillon cubes, salt, pepper, bay leaf, and thyme.
  4. Bring to a boil, then reduce heat and simmer covered for about 1 hour.
  5. Add rice, tomato sauce, red kidney beans, and whole tomatoes during the last 15 minutes of cooking.
  6. Remove bay leaf before serving.
