Ingredients

  • 1 1/2 cups chopped onions
  • 1/4 cup margarine
  • 1 cup sour cream
  • 1/4 teaspoon salt
  • 1 cup shredded sharp Cheddar cheese
  • 1 package (7 1/2 oz.) corn muffin mix
  • 2 eggs
  • 1/2 cup milk
  • 1 can (16 oz.) cream-style corn
  • 1/4 teaspoon cayenne pepper
  • 1 tablespoon Parmesan cheese

Instructions

  1. Saute chopped onions in margarine in a skillet; let cool.
  2. Add sour cream, salt, and 1/2 cup shredded Cheddar cheese to the onion mixture.
  3. Combine corn muffin mix, beaten eggs, milk, cream-style corn, and cayenne pepper in a bowl.
  4. Pour the muffin mixture into a greased 9-inch baking pan.
  5. Spoon the onion mixture on top of the batter.
  6. Sprinkle remaining Cheddar cheese and Parmesan cheese over the top.
  7. Bake at 425°F for 30 minutes.
