Ingredients

  • 1 1/2 cups orange juice
  • 1 cup quick oats
  • 1/2 cup soft butter
  • 1 cup sugar
  • 1/2 cup brown sugar
  • 2 eggs
  • 1 teaspoon vanilla extract
  • 1 3/4 cups flour
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 teaspoon cinnamon
  • 1/2 cup broken walnut pieces
  • 1 tablespoon grated orange rind

Instructions

  1. Heat the orange juice to boiling and pour over the quick oats. Set aside.
  2. Cream the soft butter, sugar, and brown sugar together.
  3. Beat in the eggs, one at a time.
  4. Add the vanilla extract.
  5. Sift together the flour, baking powder, baking soda, salt, and cinnamon.
  6. Alternately blend the flour mixture and the oat-juice mixture into the creamed mixture, beginning and ending with the flour mixture.
  7. Fold in the broken walnut pieces and grated orange rind.
  8. Pour the batter into an oblong cake pan and bake at 350°F (175°C) for about 40 minutes.
  9. Cool the cake, spread with frosting, and broil for 1 minute before serving.
