Ingredients

  • 2 lb. beef round steak
  • 2 Tbsp. cooking fat
  • water
  • 1/3 c. soy sauce
  • 2 tsp. sugar
  • 1/4 tsp pepper
  • 1 clove garlic
  • 3 carrots
  • 2 green peppers
  • 8 green onions
  • 1/2 lb. mushrooms
  • 1 (8 oz.) can water chestnuts
  • 2 Tbsp. cornstarch
  • 1/4 c. water

Instructions

  1. Cut the beef round steak into strips about 1/8 inch thick and 3 to 4 inches long.
  2. Brown the beef strips in cooking fat, then pour off the drippings.
  3. Measure the drippings and add water to make 1 cup.
  4. Combine water, soy sauce, sugar, pepper, and minced garlic; add to the meat.
  5. Cover and cook slowly for 45 minutes.
  6. Using a vegetable peeler, cut carrots lengthwise into thin strips and then cut those strips in half.
  7. Add carrots, green peppers, green onions, mushrooms, and water chestnuts to the meat mixture.
  8. Cover and continue cooking for 15 minutes.
  9. Mix cornstarch with water and add to the cooking liquid to thicken for gravy.
  10. Serve hot with cooked rice.
