Ingredients

  • 1 ox tail
  • 3 pt. stock
  • 1 large onion
  • 1 carrot
  • 1/2 c. chopped tomatoes
  • 1 stalk celery
  • 1 c. claret
  • 1 Tbsp. butter
  • 1 sprig thyme
  • 2 sprigs parsley
  • 1 bay leaf
  • 6 peppercorns
  • 1 Tbsp. Worcestershire sauce
  • salt

Instructions

  1. Wash the ox tail well and split into small joints.
  2. Melt the butter in a saucepan; add pieces of ox tail and cook until beginning to brown.
  3. Add diced onion and fry until the onion is a deep gold.
  4. Pour in the stock, then add sliced carrot and celery, tied thyme, parsley, and bay leaf.
  5. Stir in chopped tomatoes and claret.
  6. Season with Worcestershire sauce, peppercorns, and salt.
  7. Bring to a boil and let it simmer until the meat is tender and flavors meld.
  8. Serve hot.
