Ingredients

  • 1 to 1 1/2 lb. ground meat
  • 4 c. chopped onion
  • 3 cloves minced garlic
  • 2 c. chopped tomatoes
  • salt and pepper to taste
  • 1 Tbsp. ground hot pepper
  • additional oil as needed
  • flour as needed
  • 1/2 c. raisins
  • 1/2 c. chopped olives
  • 4 hard-boiled eggs
  • 1/2 c. chopped peanuts
  • 2 Tbsp. vegetable oil
  • 4 lb. potatoes
  • 1 raw egg
  • hot salsa

Instructions

  1. Saute ground meat, chopped onion, and minced garlic in oil, gradually adding salt, pepper, and ground hot pepper.
  2. Add chopped tomatoes and simmer for at least 10 minutes.
  3. Mix in raisins, chopped olives, chopped hard-boiled eggs, and chopped peanuts.
  4. Prepare potatoes by boiling, then mash and form into balls or discs.
  5. Encase the meat mixture in the potato dough, sealing well.
  6. Deep fry or bake the papa rellena until golden brown.
  7. Serve hot with hot salsa.
