Ingredients

  • 4 lb boneless pork loin
  • flour
  • 4 Tbsp olive oil
  • 1 large yellow onion
  • 4 cloves garlic
  • 4 cans diced green chilies
  • 2 cans tomatoes with chiles
  • cumin
  • chili powder
  • beer
  • chicken stock

Instructions

  1. Lightly dredge the pork in flour, then brown lightly in olive oil in a large Dutch oven.
  2. Remove the pork from the Dutch oven; lower the heat and cook the diced onion and minced garlic until fragrant.
  3. Return the pork to the Dutch oven and add the canned diced green chilies and tomatoes with chiles.
  4. Add additional liquid (beer and/or chicken stock) to almost cover the pork.
  5. Simmer covered until the pork is just tender, about 30 minutes.
  6. Season generously with cumin and chili powder, about 3-4 tablespoons of cumin.
  7. Simmer for an additional 30 minutes.
  8. Serve hot with heated tortillas and grated Jack cheese if desired.
