Ingredients

  • 2 packages frozen chopped spinach
  • 2 large onions
  • 3/4 cup butter or margarine
  • 2 cups cornbread stuffing mix
  • 5 eggs
  • 1/2 cup Parmesan cheese
  • 1 tablespoon garlic powder

Instructions

  1. Cook spinach as directed and drain.
  2. Saute onions in butter until transparent.
  3. Add stuffing mix to sauteed onions and mix well.
  4. Mix eggs, spinach, and garlic powder in a separate bowl.
  5. Add the egg-spinach mixture to the stuffing-butter mixture and combine.
  6. Roll the mixture into walnut-sized balls and freeze on a cookie sheet.
  7. Keep frozen in plastic bags until ready to bake.
  8. Preheat oven to 400°F.
  9. Bake the frozen balls for 15 to 20 minutes until firm and golden.
