Ingredients

  • 1 cup cooked or canned black-eyed peas, drained
  • 1 cup yellow or white cornmeal
  • 1/2 cup flour
  • 1 teaspoon salt
  • 1/2 teaspoon baking soda
  • 2 eggs
  • 1 cup buttermilk
  • 3/4 cup cream-style corn
  • 1/2 cup corn or cooking oil
  • 1/2 pound grated Cheddar cheese
  • 1 onion, chopped
  • 2 jalapenos, chopped

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Mix all ingredients together in a large bowl, adding the cheese last.
  3. Pour the batter into a greased oblong baking dish.
  4. Bake for 45 minutes until golden brown and cooked through.
