Ingredients

  • 2 cups unsifted flour
  • 1 1/2 cups sugar
  • 2 teaspoons baking soda
  • 2 teaspoons ground cinnamon
  • 1/2 teaspoon salt
  • 3 eggs
  • 1 can (3 1/2 oz.) flaked coconut
  • 3/4 cup chopped pecans
  • 1/2 cup raisins
  • 2 cups grated raw carrots
  • 1 cup peanut oil or Crisco oil
  • 2 teaspoons vanilla

Instructions

  1. Combine flour, sugar, baking soda, cinnamon, and salt.
  2. Stir in flaked coconut, chopped pecans, and raisins.
  3. Blend in grated raw carrots, oil, eggs, and vanilla.
  4. Pour into an oiled and floured 9 x 5-inch loaf pan.
  5. Let stand for 20 minutes.
  6. Bake at 350°F (175°C) for 1 hour and 40 minutes or until done.
  7. Cool in pan for 5 minutes before removing.
