Delightful cookies with a warm cinnamon flavor, incorporating shredded wheat, pumpkin or zucchini, raisins or chocolate chips, perfect for cozy gatherings and sweet cravings.
Ingredients
- 5 1/2 cups miniature Shredded Wheat ⓘ
- 1 cup white flour ⓘ
- 1 cup quick oats ⓘ
- 2 teaspoons baking soda ⓘ
- 2 teaspoons cinnamon ⓘ
- 1 cup margarine ⓘ
- 1/2 cup chopped nuts ⓘ
- 1 1/2 cups brown sugar ⓘ
- 2 eggs ⓘ
- 1 teaspoon vanilla ⓘ
- 1 (16 oz.) can pumpkin or 1 pint zucchini pineapple ⓘ
- 1 cup raisins or chocolate chips ⓘ
Instructions
- Chop Shredded Wheat finely in a blender or food processor until you have about 3 cups.
- In a large bowl, combine the chopped Shredded Wheat, white flour, quick oats, baking soda, and cinnamon.
- In a separate bowl, cream together the margarine and brown sugar until smooth.
- Beat in the eggs one at a time, then stir in vanilla.
- Mix in the pumpkin or zucchini pineapple until well blended.
- Gradually add the dry ingredients to the wet ingredients, mixing well.
- Fold in the chopped nuts and raisins or chocolate chips.
- Drop spoonfuls of dough onto greased baking sheets.
- Bake at 350°F (175°C) for about 15 minutes or until golden brown.
- Allow cookies to cool on wire racks before serving.
