Ingredients

  • 5 1/2 cups miniature Shredded Wheat
  • 1 cup white flour
  • 1 cup quick oats
  • 2 teaspoons baking soda
  • 2 teaspoons cinnamon
  • 1 cup margarine
  • 1/2 cup chopped nuts
  • 1 1/2 cups brown sugar
  • 2 eggs
  • 1 teaspoon vanilla
  • 1 (16 oz.) can pumpkin or 1 pint zucchini pineapple
  • 1 cup raisins or chocolate chips

Instructions

  1. Chop Shredded Wheat finely in a blender or food processor until you have about 3 cups.
  2. In a large bowl, combine the chopped Shredded Wheat, white flour, quick oats, baking soda, and cinnamon.
  3. In a separate bowl, cream together the margarine and brown sugar until smooth.
  4. Beat in the eggs one at a time, then stir in vanilla.
  5. Mix in the pumpkin or zucchini pineapple until well blended.
  6. Gradually add the dry ingredients to the wet ingredients, mixing well.
  7. Fold in the chopped nuts and raisins or chocolate chips.
  8. Drop spoonfuls of dough onto greased baking sheets.
  9. Bake at 350°F (175°C) for about 15 minutes or until golden brown.
  10. Allow cookies to cool on wire racks before serving.
