Ingredients

  • 1 1/2 cups brown sugar, firmly packed
  • 1 stick butter or oleo
  • 1 egg
  • 12 oz cottage cheese
  • 2 cups fresh cranberries
  • 1 cup raisins (optional)
  • 2 1/2 cups flour
  • 1 teaspoon salt
  • 1/2 teaspoon soda
  • 1 cup chopped nuts (optional)

Instructions

  1. Cream the butter until fluffy.
  2. Add sugar, egg, and cottage cheese; fold in cranberries and raisins by hand.
  3. Mix in flour, salt, soda, and chopped nuts if using.
  4. Stir together well, then fill muffin cups 3/4 full.
  5. Bake at 350°F for 30 to 35 minutes until puffed and lightly browned.
