  • 1/4 teaspoon black pepper
  • 1/4 cup water

Instructions

  1. Combine the red wine vinegar, salad or olive oil, sugar, salt, dried oregano, black pepper, and water in a large saucepan, stirring to dissolve the sugar.
  2. Add all the prepared vegetables and sliced ingredients; toss to coat thoroughly.
  3. Bring the mixture to a boil over high heat, then reduce heat to low and simmer, covered, for 10 to 20 minutes, or until the cauliflower is crunchy but cooked.
  4. Cool the relish, then refrigerate for a day before serving, stirring several times to marinate evenly.
