Ingredients

  • 2 Tbsp butter
  • 1 medium onion, minced
  • 1 rib celery, minced
  • 1/2 green pepper, minced
  • 1 lb hamburger
  • 2 medium potatoes, sliced
  • salt and pepper to taste
  • 1 can tomato soup
  • 1 1/2 cans tomato juice
  • 2 Tbsp vinegar
  • 1 tsp garlic powder
  • 6 slices bacon
  • 4 cups chopped cabbage

Instructions

  1. Brown onion, celery, green pepper, and hamburger in butter.
  2. Mix tomato soup, tomato juice, salt, pepper, vinegar, and garlic powder to prepare the sauce.
  3. Layer in a greased 4-quart casserole: half of the cabbage, half of the potatoes, all of the meat mixture, and half of the sauce.
  4. Repeat the layering with remaining cabbage, potatoes, meat mixture, and sauce.
  5. Top with bacon slices.
  6. Bake uncovered at 350°F (175°C) for 1 1/2 to 2 hours.
