Ingredients

  • 1 1/2 lb. smoked ham (ground)
  • 1 lb. lean fresh pork (ground)
  • 1 cup finely crushed crackers
  • 2 eggs, slightly beaten
  • 1 1/2 cups milk
  • 2 Tbsp. prepared mustard
  • 1/2 cup brown sugar
  • 6 slices pineapple
  • 6 maraschino cherries

Instructions

  1. Combine ground ham, ground pork, crushed crackers, slightly beaten eggs, milk, and prepared mustard in a mixing bowl.
  2. Spray Pam on the bottom and sides of a heavy skillet.
  3. Pat brown sugar over the bottom of the skillet.
  4. Arrange pineapple slices over the sugar and place a maraschino cherry in the center of each pineapple slice.
  5. Pour the meat mixture into the skillet over the pineapple and cherries.
  6. Cover and cook over low to medium heat for 10 minutes.
  7. Reduce heat to low and continue cooking for 1 hour until the meat is cooked through.
