Ingredients

  • 1 1/2 lb ground beef
  • 2/3 cup cracker crumbs
  • 1/3 cup chopped onion
  • 1 egg
  • 1 1/2 teaspoons salt
  • 1/4 teaspoon ginger
  • 1/4 cup milk
  • 4 tablespoons cornstarch
  • 1 cup brown sugar
  • 1 can pineapple chunks
  • 2/3 cup vinegar
  • 2 tablespoons soy sauce
  • 1 cup pineapple juice

Instructions

  1. Make meatballs from ground beef, cracker crumbs, chopped onion, egg, salt, ginger, and milk.
  2. Cook the meatballs in a skillet or microwave until browned and cooked through.
  3. In a separate bowl, mix cornstarch and brown sugar to create the thickening agent.
  4. Combine pineapple juice, vinegar, and soy sauce in a saucepan and bring to a boil.
  5. Add the cornstarch mixture to the sauce and cook until thickened and boiling.
  6. Add cooked meatballs and pineapple chunks to the sauce, stirring to coat. Serve hot.
