Pineapple-Onion Pork Chops

Ingredients

  • 1/4 cup all purpose flour
  • 1/2 tsp salt
  • 1/4 tsp pepper
  • 6 boneless pork loin chops
  • 3 Tbsp butter
  • 1/2 cup water
  • 1 medium onion
  • 1 1/2 cups pineapple juice
  • 2 Tbsp brown sugar
  • 1 Tbsp Dijon mustard

Instructions

  1. In a shallow dish, combine flour, salt, and pepper.
  2. Dredge pork chops in the flour mixture, shaking off excess.
  3. In a large skillet, melt butter over medium heat.
  4. Add pork chops and brown on both sides, about 3-4 minutes per side.
  5. Remove pork chops and set aside.
  6. In the same skillet, add sliced onion and cook until golden brown, about 5 minutes.
  7. Stir in pineapple juice, water, brown sugar, and honey mustard (or Dijon mustard and honey).
  8. Bring to a boil, then reduce heat and simmer for 10 minutes.
  9. Return pork chops to the skillet, cover, and simmer for an additional 10 minutes or until cooked through.
  10. Serve hot with the sauce spooned over.
