  • 2 c. sugar
  • 4 beaten eggs
  • 1 1/2 c. flour, sifted
  • 1 tall can crushed pineapple, drained

  • 1/2 tsp. baking soda
  • pinch of salt
  • 1 c. chopped nuts
  • 1/4 c. chopped dates

Instructions

  1. Preheat oven to 350°F (175°C). Grease and flour a 13 x 9-inch pan or line it with foil, then grease and flour.
  2. In a large bowl, pour melted margarine.
  3. Add sugar and mix well.
  4. Add beaten eggs and mix thoroughly.
  5. Add sifted flour, baking powder, baking soda, and salt; stir well.
  6. Fold in drained crushed pineapple.
  7. Add chopped nuts and chopped dates (if using).
  8. The dough will be lumpy.
  9. Pour batter into prepared pan.
  10. Bake for 35 minutes or until a toothpick inserted in the center comes out clean.
  11. Allow to cool.
  12. Before serving, sprinkle the top with powdered sugar.
  13. Cut into slices and serve.
