Instructions

  1. Stir-fry garlic in oil.
  2. Add peppers, onion, ground coriander, cilantro, tomato sauce, and sazon; cook until fragrant.
  3. Add ground beef and season well; cook for 30 minutes, stirring occasionally.
  4. Fry plantains, then cut into pieces.
  5. Grease an 8 x 12 x 2-inch pan and place the plantain pieces in the bottom.
  6. Add the meat mixture over the plantains and spread evenly, pressing down slightly.
  7. Sprinkle grated cheese over the meat layer, then add cooked green beans.
  8. Add another layer of plantains on top.
  9. Beat egg whites until stiff peaks form; then gently fold in sugar and yolks.
  10. Cover the dish with this meringue.
  11. Bake at 325°F (160°C) for 15 minutes.
  12. Place under the broiler for 5 minutes to brown the meringue.
  13. Let cool slightly, then cut into portions and serve.
