Ingredients

  • 1 lb ground beef
  • 1/2 c chopped onion
  • 1/2 c chopped green pepper
  • 2 c whole kernel corn
  • 2 c kidney beans
  • 2 c sliced canned tomatoes
  • 2 tsp chili powder
  • 1 tsp salt
  • 1 c shredded sharp cheese

Instructions

  1. Cook beef, onion, and green pepper until meat is browned and vegetables are tender.
  2. Drain corn, beans, and tomatoes.
  3. Add liquids from drained vegetables, chili powder, and salt to the meat and cook until liquid is reduced to about half.
  4. Add corn, beans, and tomatoes to the mixture.
  5. Simmer for 10 minutes.
  6. Stir in shredded cheese and serve.
