Pizza Eggs
A savory breakfast or brunch dish combining eggs, pizza flavors, and vegetables, topped with cheese and olives for a quick, satisfying meal perfect for any time of day.
Ingredients
- 2 tsp. margarine or butter ⓘ
- 1 small onion, chopped ⓘ
- 1/2 small green pepper, chopped
- 1/2 c. skim milk ⓘ
- 1 (2 1/2 oz.) jar sliced mushrooms, drained ⓘ
- 1/2 tsp. salt ⓘ
- 1/2 tsp. Italian seasoning ⓘ
- 1/4 tsp. pepper ⓘ
- 1/2 c. pizza sauce ⓘ
- 1/4 c. shredded Mozzarella cheese ⓘ
- 2 ripe olives, sliced ⓘ
- cilantro (optional) ⓘ
Instructions
- In a microwave-safe 8 x 1 1/2-inch round baking dish, cook margarine uncovered on 100% power (High) for 30 to 45 seconds or until melted.
- Add chopped onion and green pepper to the dish.
- Cook uncovered on High for 2 to 3 minutes or until vegetables are tender.
- In a bowl, combine eggs, milk, drained mushrooms, salt, Italian seasoning, and pepper.
- Pour the egg mixture into the baking dish with vegetables.
- Cook uncovered on High for 5 to 6 minutes or until eggs are almost set, pushing cooked portions to the center several times during cooking.
- Pour pizza sauce over the eggs.
- Sprinkle shredded Mozzarella cheese on top.
- Cook uncovered on High for 1 to 2 minutes or until cheese starts to melt.
- Garnish with sliced olives and cilantro if desired.
- Cut into wedges and serve.
