Ingredients

  • 6 pork chops
  • 1 (4 3/4 oz.) jar strained plum baby food
  • 1/4 cup flaked coconut
  • 2 tablespoons water
  • 1 tablespoon vinegar
  • 1 tablespoon cooking oil
  • 2 teaspoons soy sauce
  • 1/2 teaspoon salt
  • 1/2 teaspoon ground ginger
  • 1/2 teaspoon grated lemon peel

Instructions

  1. Trim any excess fat from the pork chops.
  2. Brown the pork chops in 1 tablespoon of cooking oil.
  3. Season the meat with salt to taste.
  4. Combine strained plum baby food, flaked coconut, water, vinegar, soy sauce, ginger, lemon peel, and pepper.
  5. Pour the sauce mixture over the browned pork chops.
  6. Cover and simmer for 35 to 40 minutes or until the meat is tender.
  7. Remove the pork chops to a warm platter and spoon the sauce over them.
