Pork Boulettes

Ingredients
- 0.5 lb ground pork ⓘ
- 1 stick butter ⓘ
- 3 Tbsp flour
- 3/4 c flour ⓘ
- 0.5 c chopped onions ⓘ
- 0.25 c chopped bell peppers
- 2 tsp chopped garlic ⓘ
- 1.5 c water ⓘ
- salt ⓘ
- cayenne ⓘ
- 2 c cooked medium-grain rice ⓘ
- 0.25 c chopped green onions ⓘ
- dash Tabasco pepper sauce ⓘ
- 2 c dried fine bread crumbs ⓘ
- essence ⓘ
- 1 egg ⓘ
Instructions
- Preheat the fryer.
- In a saute pan, over medium heat, brown the ground pork. Remove the pork from the pan and drain on a paper-lined plate.
- In a large saute pan, over medium heat, melt the butter.
- Add 3 tablespoons of flour and, stirring constantly, cook for 4 to 5 minutes until the roux is dark brown, the color of chocolate.
- Add the chopped onions and bell peppers, and cook for 3 to 4 minutes until wilted.
- Stir in the chopped garlic and cook for 1 minute.
- Add the cooked pork and cook, stirring, for 2 to 3 minutes.
- Pour in the water and season with salt and cayenne.
- Reduce heat to medium-low and simmer for 45 to 50 minutes, stirring occasionally.
- Stir in the cooked rice, chopped green onions, a dash of Tabasco sauce, and 1/2 cup of bread crumbs.
- Mix well, then remove from heat and let cool for about 20 minutes.
