Ingredients

  • 1 lb. lean ground beef
  • 1 c. fresh bread crumbs
  • 2 eggs
  • 1/4 c. green pepper
  • 1/4 c. chopped onion
  • 2 instant beef bouillon
  • 1 1/4 c. water
  • 3 Tbsp. butter
  • 1/2 tsp. salt
  • 1 (8 oz.) container sour cream
  • 2 c. instant mashed potato flakes
  • 8 slices cheese, cut in half
  • lettuce and tomato (optional)

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a medium bowl, combine ground beef, bread crumbs, 1 egg, green pepper, chopped onion, and beef bouillon; mix well.
  3. Press the meat mixture into a 9-inch pie pan to form a shell; bake for 10 minutes.
  4. Pour off any excess fat from the meat shell.
  5. In a medium saucepan, heat water, butter, and salt to boiling.
  6. Remove from heat; add sour cream and instant mashed potato flakes; stir until combined.
  7. Stir in 1 egg and half of the cheese; spoon the potato mixture into the meat shell.
  8. Bake for 10 minutes.
  9. Top with the remaining cheese and bake for an additional 5 minutes.
  10. Let stand for 5 minutes before serving.
  11. Optional: top with lettuce and tomato.
