A warm, sweet potato casserole with cinnamon, nutmeg, pecans, and pineapple, topped with marshmallows. Perfect for holiday gatherings or comforting family dinners.

Ingredients

  • 2 lb. sweet potatoes
  • 2 Tbsp. cinnamon
  • 2 tsp. nutmeg
  • 1 c. chopped pecans
  • 2 Tbsp. brown sugar
  • 1 (16 oz.) can crushed pineapple
  • 2 Tbsp. butter or margarine
  • 1 1/2 c. miniature marshmallows
  • 1 c. raisins

Instructions

  1. Boil sweet potatoes with skin on for 30 to 45 minutes until tender.
  2. Let potatoes cool, then peel off the skin and cut into chunks.
  3. Combine the peeled sweet potatoes with cinnamon, nutmeg, chopped pecans, brown sugar, crushed pineapple, and butter in a mixing bowl.
  4. Put the mixture into a square glass or aluminum pan.
  5. Bake in a preheated oven at 350°F (175°C) for 25 minutes.
  6. During the last 5 minutes, top with miniature marshmallows and brown lightly.
