  • 1/3 cup sherry
  • 1/3 soup can sherry

Instructions

  2. Mix cream of mushroom soup, sour cream, and sherry together.
  3. Pour the mixture over the chicken breasts.
  4. Spread chopped mushrooms on top of the mixture.

Tips & Substitutions

For added flavor, consider marinating the chicken breasts in a mixture of olive oil, garlic, and herbs before baking. If you don't have sherry, a splash of white wine or chicken broth can be a great substitute. To enhance the dish, you can mix in some sautéed mushrooms or bell peppers with the spinach. Using fresh spinach instead of frozen can also elevate the taste.

Serving Suggestions

This dish pairs beautifully with egg noodles, which soak up the creamy sauce perfectly. For a complete meal, serve it alongside a fresh green salad or steamed vegetables for a light and refreshing contrast. You can also microwave portions on medium power, stirring occasionally.

Frequently Asked Questions

Can I use other types of cheese instead of Parmesan?

Yes, you can substitute Parmesan with other cheeses like mozzarella or cheddar. Just keep in mind that it may alter the flavor and texture slightly. For a more robust taste, consider using a sharp cheddar, while mozzarella will offer a milder, creamier finish.

Is there a way to make this dish healthier?

Absolutely! You can use low-fat sour cream and reduced-sodium soup to cut down on calories and sodium. Additionally, using skinless chicken breasts and incorporating more vegetables, like zucchini or bell peppers, will increase the nutritional value without sacrificing flavor.

Can I prepare this dish ahead of time?

Yes, you can assemble the casserole a day in advance. Just cover it tightly with plastic wrap and refrigerate. When you're ready to bake, remove the wrap and let it sit at room temperature for about 30 minutes before baking to ensure even cooking.
