Ingredients

  • 1 c. oatmeal
  • 1 c. all-purpose flour
  • 1 c. sugar
  • 1 tsp. baking powder
  • 1/4 tsp. salt
  • 1 c. fresh or canned pumpkin
  • 1 egg
  • 1 stick butter
  • 1 tsp. vanilla flavoring
  • 1/2 c. raisins
  • 1/2 c. nuts

Instructions

  1. In a medium bowl, combine oatmeal, flour, sugar, baking powder, and salt. Stir to mix.
  2. Make a well in the center; add pumpkin, egg, butter, and vanilla. Stir until dry ingredients are moistened.
  3. Stir in raisins and nuts.
  4. Spread mixture in a greased 9 x 9 pan.
  5. Bake at 350° for 35 to 40 minutes or until firm and lightly browned.
  6. Let cool in the pan, then cut into bars.
