Ingredients

  • 1 1/2 cups flour
  • 1/2 cup sugar
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1/2 teaspoon baking soda
  • 1 teaspoon cinnamon
  • 1/2 cup egg substitute
  • 1 cup canned pumpkin
  • 1/4 teaspoon ginger
  • 1/8 teaspoon cloves
  • 1 cup raisin bran cereal
  • 3/4 cup skim milk
  • 1/2 cup light corn syrup

Instructions

  1. Spray 12 muffin cups with a nonfat cooking spray.
  2. In a medium bowl, combine flour, sugar, baking powder, baking soda, salt, cinnamon, ginger, and cloves.
  3. In a large bowl, using a wire whisk, beat the egg substitute.
  4. Stir in pumpkin, cereal, milk, and corn syrup; then add to the flour mixture and stir until well blended.
  5. Spoon the batter into the prepared muffin cups.
  6. Bake at 400°F (200°C) for 18 to 20 minutes.
  7. Cool in the pan for 5 minutes before removing.
