Ingredients

  • 3 eggs
  • 3/4 cup pumpkin
  • 1 teaspoon baking powder
  • 1 teaspoon ginger
  • 1/2 teaspoon salt
  • 1/2 cup chopped nuts
  • 1 cup sugar
  • 3/4 cup flour
  • 2 teaspoons cinnamon
  • 1/2 teaspoon nutmeg
  • 1 cup dates

Instructions

  1. Beat eggs; add sugar and beat for 2 minutes.
  2. Stir in pumpkin.
  3. Sift dry ingredients together and add to pumpkin mixture.
  4. Spread on greased and floured wax paper in an oblong pan; sprinkle with chopped nuts.
  5. Bake at 375°F for 15 minutes.
  6. Turn out onto a confectioners' sugar-covered cloth; peel off wax paper.
  7. Roll up while warm and let cool.
  8. Add filling and re-roll.
