Ingredients

  • 2 2/3 cups sugar
  • 2/3 cup canola oil
  • 8 egg whites
  • 2 cups pumpkin
  • 2 1/3 cups flour
  • 2/3 cup water
  • 1/2 teaspoon baking powder
  • 2 teaspoons soda
  • 1 1/2 teaspoons salt
  • 1 teaspoon cinnamon
  • 1 teaspoon cloves
  • 2/3 cup nuts
  • 2/3 cup dates
  • 1 cup raisins

Instructions

  1. Preheat oven to 350°F (175°C). Sift flour; measure.
  2. Add baking powder, soda, salt, cinnamon, and cloves; sift twice.
  3. Add chopped nuts and dried fruit to flour mixture until well coated.
  4. In a separate bowl, measure sugar and canola oil; cream well.
  5. Add egg whites a little at a time, beating after each addition.
  6. Stir in pumpkin.
  7. Add flour mixture alternately with water, beginning and ending with flour.
  8. Pour batter into two greased and floured loaf pans.
  9. Bake for 1 hour or until a toothpick inserted into the center comes out clean.
  10. Cool in pans for a few minutes, then turn out onto wire racks to cool completely.
