Ingredients

  • 1 1/4 cups all-purpose flour
  • 1 tablespoon baking powder
  • 1 cup cornmeal
  • 1/2 teaspoon salt
  • 1 teaspoon ginger
  • 3/4 cup packed brown sugar
  • 1/4 cup margarine, melted
  • 2 eggs, lightly beaten
  • 1 cup cooked, mashed pumpkin
  • 2/3 cup buttermilk

Instructions

  1. Preheat oven to 350°F (175°C).
  2. Grease an 8 x 8-inch baking pan or muffin pan.
  3. In a large bowl, stir together all ingredients; mix well, but don't overmix batter.
  4. Pour batter into prepared pan.
  5. Bake for about 45 minutes, or until a toothpick inserted into the center comes out clean.
