- Combine the flour, cornmeal, salt, baking powder, and baking soda in a bowl and sift together.
- In another bowl, beat the egg slightly, then beat in the honey or molasses, pumpkin, buttermilk, and melted butter until well blended.
- Add the liquid ingredients all at once to the flour mixture and stir just until combined.
- Spoon the batter into greased medium-sized muffin pans, filling about 2/3 full.
- Bake in a 425°F oven until nicely browned on top, about 15 minutes.
- Serve hot with plenty of butter. Extra good with baked beans or meat dishes.
