Ingredients

  • 1 cup flour
  • 1 cup yellow cornmeal
  • 1 teaspoon salt
  • 1 teaspoon baking powder
  • 3/4 teaspoon baking soda
  • 1 egg
  • 1/2 cup honey or light molasses or 1/4 cup each
  • 3/4 cup canned or cooked pumpkin
  • 1 cup cultured buttermilk
  • 1/4 cup melted butter or salad oil

Instructions

  1. Combine the flour, cornmeal, salt, baking powder, and baking soda in a bowl and sift together.
  2. In another bowl, beat the egg slightly, then beat in the honey or molasses, pumpkin, buttermilk, and melted butter until well blended.
  3. Add the liquid ingredients all at once to the flour mixture and stir just until combined.
  4. Spoon the batter into greased medium-sized muffin pans, filling about 2/3 full.
  5. Bake in a 425°F oven until nicely browned on top, about 15 minutes.
  6. Serve hot with plenty of butter. Extra good with baked beans or meat dishes.
