Ingredients

  • 4 beaten eggs
  • 3 c. sugar
  • 1 (16 oz.) can pumpkin
  • 1 c. oil
  • 1/3 c. water
  • 1/2 tsp. vanilla
  • 3 1/2 c. all-purpose flour
  • 1 1/2 tsp. ground cinnamon
  • 1 tsp. salt
  • 1 tsp. baking soda
  • 8 oz. dates or raisins
  • 1 1/2 c. pecans

Instructions

  1. Combine eggs and sugar in a large mixing bowl. Stir in pumpkin, oil, water, and vanilla until blended.
  2. Stir together flour, cinnamon, salt, and baking soda.
  3. Add pumpkin mixture, stirring until just combined.
  4. Fold in dates and nuts.
  5. Pour mixture into 4 greased 7 x 3 x 2-inch pans or 2 (9 x 5 x 3-inch) pans.
  6. Bake in a 350° oven about 55 minutes for small loaves, 65 minutes for large loaves.
