Ingredients

  • 3 eggs
  • 1 cup sugar
  • 2/3 cup pumpkin
  • 1 teaspoon lemon juice
  • dash of salt
  • 3/4 cup plain flour
  • 2 teaspoons cinnamon
  • 1 teaspoon baking powder
  • 1 teaspoon ginger
  • 1/2 teaspoon nutmeg
  • chopped nuts

Instructions

  1. Beat eggs on high until frothy, then gradually beat in 1 cup sugar.
  2. Stir in pumpkin and lemon juice.
  3. In a separate bowl, combine flour, baking powder, cinnamon, ginger, nutmeg, and salt.
  4. Fold the dry ingredients into the pumpkin mixture.
  5. Spread the batter in a greased and floured 15 x 10-inch cookie sheet.
  6. Top with chopped nuts.
  7. Bake at 375°F (190°C) for 15 minutes.
