Ingredients

  • 3 cups sifted flour
  • 2 teaspoons baking powder
  • 2 teaspoons baking soda
  • 3.5 teaspoons cinnamon
  • 1 teaspoon salt
  • 4 large eggs
  • 1.5 cups corn oil
  • 1 can pumpkin
  • 1 cup chopped walnuts
  • 0.5 to 1 cup raisins (optional)
  • 2 cups sugar

Instructions

  1. Sift together flour, baking powder, baking soda, cinnamon, and salt on waxed paper.
  2. Beat eggs in a large bowl with an electric beater on high until well mixed.
  3. Gradually add sugar, beating until thick and lemon-colored.
  4. Constantly beat and pour in corn oil.
  5. At low speed, blend in dry ingredients alternately with pumpkin until smooth, beginning and ending with dry ingredients.
  6. Add chopped walnuts and mix well.
  7. Turn the batter into a well-greased angel food or tube pan (10 x 4).
  8. Bake at 350°F (175°C) for approximately 1 hour and 10 minutes.
  9. Add glaze (Cream Cheese Frosting) and drizzle down the sides.
