Ingredients

  • 4 quail
  • 1/3 cup oil
  • 1 carrot, chopped fine
  • 1 small onion, minced
  • 1 tablespoon minced green pepper
  • 1 small can mushrooms
  • 2 tablespoons flour
  • 2 cups chicken broth
  • 1/3 cup white wine
  • salt

Instructions

  1. Rub the quail lightly with salt, then brown them in oil.
  2. Remove the quail to a heated casserole.
  3. In the same oil, sauté the chopped carrot, minced onion, minced green pepper, and canned mushrooms.
  4. Blend in flour and stir in the heated chicken broth.
  5. Season the sauce to taste with salt.
  6. Pour the sauce and white wine over the quail in the casserole.
  7. Cover and bake at 350°F for about 1 hour.
  8. Serve the quail over rice.
