A quick and flavorful fruit curry combining tender chicken with sweet dried apricots, apples, and raisins, perfect for those who enjoy a mildly spiced, fruity dish.

Ingredients

  • 1 chicken, cut into pieces
  • 2 Tbsp. oil
  • 1 Tbsp. butter
  • 1 small onion, chopped
  • 3 heaping Tbsp. curry powder
  • 1/2 cup fresh apples, diced
  • 1/2 cup dried apricots, chopped
  • 1/2 cup raisins
  • 1 tsp. salt
  • 3 Tbsp. vinegar or fresh lemon juice
  • 1/4 cup peanuts, slightly crushed

Instructions

  1. Brown the chicken in oil and butter over moderate heat. Remove the pieces and set aside.
  2. Lightly sauté the chopped onion in the same large skillet or pot.
  3. Stir in the curry powder; return the chicken to the pot and cook for 3 to 5 minutes, turning pieces several times.
  4. Add the diced apples, chopped apricots, raisins, salt, vinegar or lemon juice, and crushed peanuts, with enough water to cover.
  5. Bring to a boil; reduce heat, cover, and simmer until the chicken is tender, about 45 minutes.
  6. If the sauce is too thin to ladle well over rice, cook uncovered for another 15 to 20 minutes until the liquid is reduced.
