Ingredients

  • 1 lb. ground beef
  • 1/2 c. chopped onions
  • 1/2 c. celery
  • 1/2 c. bell peppers
  • seasoning to taste
  • 1 (1 lb.) can mixed vegetables, drained
  • 1 (10 1/2 oz.) can cream of mushroom soup
  • 1 (4 oz.) can mushrooms

Instructions

  1. Brown the ground beef in a skillet; drain off excess fat.
  2. Add chopped onions, celery, and bell peppers to the meat mixture.
  3. Saute until the vegetables are tender and cooked.
  4. Season the mixture to taste with preferred seasonings.
  5. Stir in drained mixed vegetables, cream of mushroom soup, and sliced mushrooms (if using).
  6. Pour the mixture into a 1 1/2-quart casserole dish.
  7. Place biscuits over the top of the casserole.
  8. Bake at 400°F for 15 minutes or until the biscuits are brown.
