Ingredients

  • 1 cup shortening
  • 1 cup brown sugar
  • 1 cup granulated sugar
  • 2 eggs
  • 2 cups flour
  • 1 tablespoon baking soda
  • 1/2 tablespoon baking powder
  • 1 cup coconut
  • 1 cup oats

Instructions

  1. Mix the shortening, brown sugar, and granulated sugar well.
  2. Add eggs and mix until combined.
  3. Stir in flour, baking soda, baking powder, coconut, and oats.
  4. Drop spoonfuls of dough onto an ungreased cookie sheet.
  5. Bake at 350°F (175°C) for 8 to 10 minutes until golden brown.
