Ingredients

  • 1 pound polish sausage, cut into 1-inch pieces
  • 3/4 cup chopped onions
  • 3/4 cup chopped celery
  • 3/4 cup chopped green pepper
  • 2 teaspoons minced garlic
  • 3 tablespoons margarine or butter
  • 3 15 ounce cans pinto beans
  • 2 bay leaves
  • 2 teaspoons Hungarian paprika
  • 1 teaspoon dried whole thyme
  • 1/2 teaspoon ground red pepper
  • 1/2 teaspoon dried whole oregano

Instructions

  1. Sauté sausage, onions, celery, green pepper, and garlic in margarine or butter in a large skillet until tender.
  2. Stir in pinto beans and add seasoning such as bay leaves, paprika, thyme, red pepper, and oregano.
  3. Add salt to taste.
  4. Simmer for 30 to 40 minutes, then remove bay leaves.
  5. Serve hot over cooked rice.
