Red Beans & Rice

Ingredients
- 1 pound polish sausage, cut into 1-inch pieces ⓘ
- 3/4 cup chopped onions ⓘ
- 3/4 cup chopped celery ⓘ
- 3/4 cup chopped green pepper ⓘ
- 2 teaspoons minced garlic ⓘ
- 3 tablespoons margarine or butter ⓘ
- 3 15 ounce cans pinto beans ⓘ
- 2 bay leaves ⓘ
- 2 teaspoons Hungarian paprika ⓘ
- 1 teaspoon dried whole thyme ⓘ
- 1/2 teaspoon ground red pepper ⓘ
- 1/2 teaspoon dried whole oregano ⓘ
Instructions
- Sauté sausage, onions, celery, green pepper, and garlic in margarine or butter in a large skillet until tender.
- Stir in pinto beans and add seasoning such as bay leaves, paprika, thyme, red pepper, and oregano.
- Add salt to taste.
- Simmer for 30 to 40 minutes, then remove bay leaves.
- Serve hot over cooked rice.
