- In a large bowl, combine flour, sugar, baking powder, baking soda, and salt.

- Add the ricotta mixture to the dry ingredients and stir just until blended.
- Fold in the chopped rhubarb and slivered almonds, if using.
- Scoop the batter into the prepared loaf pan and smooth the top.
- Bake for about 50 minutes or until a toothpick inserted into the center comes out clean.
