Ingredients

  • 2 c. flour
  • 3/4 c. sugar
  • 1 1/2 tsp. baking powder
  • 1 tsp. baking soda
  • 1/2 tsp. salt
  • 6 Tbsp. melted margarine
  • 1 c. ricotta cheese
  • 1/2 c. milk
  • 2 eggs
  • 1/2 tsp. almond extract
  • 1 c. finely chopped rhubarb
  • 1/2 c. slivered almonds
  • confectioners sugar

Instructions

  1. Preheat the oven to 350°F (175°C). Grease and flour a 9 x 5 inch loaf pan.
  2. In a large bowl, combine flour, sugar, baking powder, baking soda, and salt.
  3. In a medium bowl, beat together melted margarine, ricotta cheese, milk, eggs, and almond extract.
  4. Add the ricotta mixture to the dry ingredients and stir just until blended.
  5. Fold in the chopped rhubarb and slivered almonds, if using.
  6. Scoop the batter into the prepared loaf pan and smooth the top.
  7. Bake for about 50 minutes or until a toothpick inserted into the center comes out clean.
  8. Allow the bread to cool in the pan for 10 minutes, then remove and cool completely on a wire rack.
  9. Sprinkle with confectioners sugar before serving.
